Summer Za'atar Crostini

Summer is all about the snacks. Drinks and appies, eating al fresco, picnics. I firmly believe that snack food doesn’t have to come from a bag. I mean, it can. But why would we want to eat a snack from a bag when we can eat this?!

I discovered Za’atar, a Middle Eastern spice mixture, last year and haven’t looked back. A blend of savoury herbs, warm spices, sesame seeds and sumac, za’atar is the perfect seasoning for chicken or to add flavour to a salad dressing…and it’s definitely the key ingredient to this recipe!

Summer Za’atar Crostini

Ingredients

  • 1 baguette, sliced

  • Juice of a lemon

  • 2 tbsp olive oil

  • 1 tbsp za’atar spices

  • Salt and pepper, to taste

  • 5 mini cucumbers, diced

  • 1 cup cherry tomatoes, diced

  • 1 cup hummus

  • 1/2 cup crumbled feta

  • 1/2 cup fresh dill and italian parsley, chopped

Directions

  1. Set the oven to broil. Spread the baguette slices on a cookie sheet and brush lightly with olive oil. Broil for 3-5 minutes, or until the tops are golden and crispy.

  2. In a large bowl, whisk together lemon juice, olive oil, za’atar and salt and pepper.

  3. Toss the cucumbers and tomatoes in the bowl and stir to combine.

  4. Swipe each baguette slice with a healthy layer of hummus, top with about 2 tbsp of the tomato cucumber mixture. Sprinkle with feta and fresh herbs. Serve immediately!
